Deep in the forests of Ethiopia is a wild...coffee? Bet you didn’t see that coming! No, it’s not a wild mushroom or a rare mythical creature, it’s our latest addition - Yabitu Koba! Curiously referred to as a “forest coffee,” simply put this means that Yabitu Koba grows wild in the forest in Ethiopia, rather than under the conditions we often see coffee growing in - manicured rows on a hillside.
Yabitu Koba is grown at a higher altitude of 1,900 - 2,200 meters, allowing for flavors to develop for longer as the cherries take their time ripening. Flavors such as floral notes of rose, fruitiness of cranberry, the gentle acidity of sweet lime, and the sweetness of honey.
This mixed heirloom varietal is a washed process, offering a vastly different sensory experience than the natural process Guji easily found on the shelves of cafes. This process allows for more delicate and complex flavors to come forward without being overpowered by bold notes of berry upfront.
We invite you to join us in trying something simultaneously familiar and adventurous - the comfort of a cup of Ethiopian coffee, grown and processed in a different way than you may be accustomed to.
