It was passed down to Don Miguel from his father’s father. It’s a farm built by folks who walk their land in the half-light of early morning to prune coffee plants. Coffee from the Menendez’s is grown in soil tended by generations of intentionality.\u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eLas Nubes is a small lot on one of the farm’s higher mountains. The lot is made up of heritage bourbon coffee plants, which is one of the matriarchal varieties of coffee — one that is quickly dying out due to its susceptibility to an invasive rust.  The Menendez’s have been able to utilize the high elevation and attentive growing techniques to enable their bourbon plants to continue to thrive. \u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eThis coffee is both wet and dry milled on the farm right after it’s harvested. This means that the Menendez’s are able to control the quality of the coffee all the way from start to finish.  All this loving effort results in a cup of coffee full of the sweet, bright citrus of a tangerine, the nutty \u0026amp; buttery mouthfeel of almond paste and the deep, dark sugar of caramel to round it out. It covers a large swath of land and a large portion of it is dedicated to forests, dams, marshland, some roads and housing. The forest ecosystem remains well-preserved; it’s teeming with native flora and fauna on both land and water. Also, to manage environmental impact, the estate operates an efficient water recirculation system that includes 16 lagoons in succession designed to purify wastewater. (How neat is that?!)\u003c\/p\u003e\n\u003cp\u003eThe soil on the estate is deep, well-drained and full of red volcanic material; it’s highly fertile and ideal for growing coffee. The climate is generally cooler, with colder and wet periods from May to July, which allow for slow cherry development resulting in higher cup quality. The estate has 2 harvests, a smaller ‘early crop’ picked from April to August, and a larger ‘late crop’ harvested from October to December.\u003c\/p\u003e\n\u003cp\u003eRegardless of when the cherries are harvested, the processing remains the same. It’s a communal lot, meaning many producers can receive a premium price for their coffee, no matter how small their crop is. Each separate crop is cupped (tasted) multiple times to make sure it meets quality expectations and ensures consistency.
